Fruit and vegetables are living organisms even after being harvested. They carry on converting and using up their nutritional deposits, losing nutritional value and in the process flavour as well. This deterioration is a continual process but it takes place more quickly in a warm, light and dry air environment. With few exceptions, fruit and vegetables should be stored in a cool, dark place
Below are some helpful tips to ensure that your fruit and vegetables stay fresh for longer:
Remove the leaves from root vegetables such as carrots and radishes. This will reduce the nutritional loss from the root.
Preferably keep each variety separate, well-covered or packed in plastic bags.
Some fruits have an unfortunate effect on others. Tomatoes, apples, peaches, plums and pears emit ethylene gas which affects other fruit and vegetables near them so that they ripen too early. These fruits should therefore be kept wrapped and separated.
Mushrooms are spore plants that continue growing in the fridge. You can extend their useful life by cutting off the root and placing them in a plastic bag in as cold a place as possible.
It is best to store bakery products, such as bread, at room temperature rather than in the fridge. The starch in flour forms crystals that make bread hard.
Milk and milk products do not cope well with temperature fluctuations and should be stored in the fridge. Milk also once open can easily take on flavour from other foods, so do not place lemons or other strongly flavoured foods alongside milk cartons.
Fresh berries have a limited life, even in the refrigerator. After two days they will have lost flavour and vitamin C. It is better to freeze them if they are not going to be eaten straight away.
Broccoli, salad leaves and cut herbs are best stored in plastic bags rinsed with water.
Potatoes should be stored in a light proof bag, like a brown sack. This prevents sprouting and the formation of solanine, which is poisonous in large quantities.
Vegetables oils/olive oils should also be stored in a cool dry place to prevent the breakdown of fatty acids.
